Easy Instant Pot Chuck Roast Beef Stroganoff Recipe

An easy delicious meal that is made in half the time thanks to the Instant Pot method.

Easy Instant Pot Chuck Roast Beef Stroganoff Recipe

Serves: 6-8 people

Total time: 1 hr 10 mins

Ingredients:

2 tablespoons olive oil

3-4 pounds boneless chuck roast, cut into 3 inch chunks

1 small sweet onion, diced

6 oz sliced fresh baby bella or button mushrooms

4 cloves garlic, minced

1 tablespoon chopped parsley (optional)

1 cup red wine

3 cups beef broth

3 Tablespoons Worcestershire sauce

16 oz sour cream

1 tablespoon Dijon mustard 

8 oz package wide egg noodles

sea salt and pepper to taste

Directions:

  1. Turn on a multi-functional pressure cooker and select the Saute function set to High. Sprinkle salt and pepper on all side of the beef chunks. Add olive oil and brown chuck roast in two batches. Remove to plate.

  2. Add onions, garlic, mushrooms and parsley and cook until soft, 2 to 3 minutes. Remove to a plate. 

  3. Add wine to deglaze the pot, scraping off all the browned bits. Reduce wine by half. Add beef broth and Worcestershire sauce. Cancel Saute function.

  4. Put beef chucks and mushroom mixture back into the pot. Make sure beef is mostly covered by broth. Close and lock the lid. 

  5. Select High pressure according to manufacturer's instructions; set timer for 40 minutes. Allow 10 to 15 minutes for pressure to build.

  6. Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method. Unlock and remove the lid. 

  7. Remove beef chucks to plate. Skim fat from top of broth.  Shred beef while noodles are cooking.

  8. Stir egg noodles into the remaining broth.

  9. Close and lock the lid. Select High pressure according to manufacturer's instructions; set timer for 2 minutes. Allow 10 minutes for pressure to build. Release pressure carefully using the quick-release method. Unlock and remove the lid.

  10. Stir in sour cream and dijon mustard.  Add shredded beef into sauce and noodles stirring slowly until combined. Season with salt and pepper to taste.

  11. Serve immediately.
