Cast-iron pan Honey Cornbread
After suffering through many dry tasteless cornbread recipes I have found a keeper! A cast-iron pan helps create a nice brown crust on the cornbread.
Ingredients:
1 cup yellow cornmeal (I like coarse cornmeal)
1 cup all-purpose flour
1 tablespoon baking powder
1/4 cup granulated sugar
1 teaspoon salt
1 cup whole milk
2 large eggs
1/2 stick butter (4 Tablespoons or 2 oz), melted plus 2 tablespoons for pan
1/4 cup honey
12-inch cast iron pan
Directions
Put 12-inch cast iron pan in oven.
Preheat oven to 400 degrees F.
Put 2 Tablespoons unsalted butter in cast-iron pan and melt in oven.
Mix the cornmeal, flour, baking powder, sugar, and salt in a medium sized mixing bowl.
Add whole milk, eggs, butter, and honey. Stir until just mixed.
Add cornbread batter and smooth evenly in pan.
Bake for 15-18 minutes, until golden.
Allow to cool slightly. Cut and serve warm for best results.
Serves 6-8 people
